TOMATO PILLAF RICE / PILAF TOMATO



Pilaf is a class of rice dishes, most commonly referring to rice cooked in a seasoned broth with meat or vegetables.

This simple and tasty dish can easily be made with ingredients likely to be found in your pantry and fridge.  It’s a red tomato pilaf a.k.a as “domatorizo” in Greek.  It simply translates as tomato rice. Pilafs are a wonderful addition to a dinner and can easily be changed to suit your favourite spices.  In this instance I’ve used "briyani powder, evaporated milk with tomato puree and Heinz tomato  soup.  I varied from the original recipe by adding carrots, fresh tomatoes and basmati rice.  It was so delicious I devoured most of it in one go!  I loved adding "dalca", ayam masak merah, pappadom and cucumber salsa  to make it a complete meal.



 RECIPE FOR MALAYSIA TOMATO PILAF

1 kg basmathi rice / 1 kg basmathi – equivalent to 5/12 cup rice
½ ladle ghee / ½ senduk minyak sapi
2 tbsp biryani powder / 2 sdb rempah biryani
5 cloves garlic / 5 ulas bawang putih*
2” ginger / 2” halia*
11 shallot / 11 biji bawang merah*
I onion thinly slice / 1biji bawang merah dihiris nipis
1 carrot grated / 1 batang lobak merah diparut
3 fresh tomatoes thinly slice / 3 biji tomato segar dihiris nipis
3 strig coriander leaves thinly slice / 3 tangkai daun ketumbar dihirs nipis
½ cup evaporated milk / 1/2 cawan susu cair
1 small can puree tomato / 1tin kecill tomato puree
1 cup Heinz  tomato / 1 cawan tomato Heinz
4 cups chicken stock / 4 cawan air stok ayam
1 cinnamon stick / 1 batang kayu manis
3 anise star / 3 bunga lawang
5 cardamon pod / 5 biji buah pelaga
salt and pepper to taste / garam dan gula secukup rasa

Method

  1. Pound all * ingredients and mix with biryani powder set aside / Tumbuk atau blend bahan bertanda * dan  gaul bersama rempah biryani dan letak sebelah.
  2. Heat up ghee and saute the leeks onion till soft, add cinnamon, anise star and cardamom adan stir fry till fragrant / Panaskan minyak sapid an tumis bawang yang dihiris sehingga lembut. Masukkan kulit kayu mais, bunga lawang dan buah pelage tumis sehingga naik baunya.
  3. Add chicken stock and bring to boil / Masukkan stok ayam dan biar mendidih
  4. Add the remaining ingredients , coriander leaves, slice tomato, carrot, tomato puree, tomato Heinz and evaporated milk. Allow to boil and salts and sugar to taste / Masukkan stok ayam, hirisan tomato, lobak merah, daun ketumbar, susu, tomato puree, tomato Heinz dan garam dan gula secukup rasa biarkan mendidih.
  5. Add the rice, stir thoroughly and reduce the heat./ Perlahankan api
  6. Cover the pot and let it simmer on a low heat for 15 mins until the rice is just tender BUT the liquid has NOT all been absorbed. / Tutp periuk dan biarkan atas api sehingga nasi masak
  7. Remove from the heat and place a kitchen towel between the lid and the pot and let it rest until the rice has swollen.  The residual heat will allow this to cook a little further.
  8. Serve  the tomato pilaf with curry and any dish of your favourite


Kalau kita panggil Nasi Tomato, di Greek nasi ini dinamakan "domatorizo" mana kalau di Mediterranean dan Timur Tengah di namakan pula "pillaf", sebenarnya nasi ada banyak variasinya...bergantung kepada kita yang menyediakanya. Dari yang mudah kepada yang sukar. 

Pillaf ini kalau dari segi terjemahanya bermakna nasi yang dimasak bersama daging atau sayuran...dalam resipi ini saya biarkanya kosongnya...cuma saya masukkan lobak merah yang diparut. hirisan tomato segar dan daun ketumbar. Untuk mendapatkan hasil yang mantap saya tumis pakai rempah briyani sedikit...biarkan ada rasa rempah sedikit ..bila dibuat sebegini nasi..jadi sedap makan begitu aje...dilemakkan lagi dengan susu, cair. Biasanya dihidang bersama dalca, ayam merah, jelantah dan pappadom. Kalau extra rajin buah sedikit sambal pudina...pasti lagi mantop.

Salam Paty...lama lah kita tak jenguk sini. Dalam bulan puasa nie kurang lah kita update ..hehe keletihan. Tapi rajin nya paty masak hari hari ye...sedap belaka. Nanti kita nak lihat kukis raya pulak.
